    Ma Joly, our elegant beachside restaurant, has been open since January 2004 and has already built a fine reputation for its world-class French and International cuisine. Dining takes place alfresco on our open terrace or under the shelter of a traditional Balinese alang alang roof, where stylish decor is complemented by Indonesian artwork Alternatively guests may choose to feast within our graceful pergola supported by Romanesque stone pillars running half the length of the white sandy beach. Our Beach Bar stands beside a Balinese temple and an ancient holy Ancak tree. This breezy, open-air pavilion boasts a large circular bar under a lofty thatched roof. Here guests can watch the legendary sunsets while enjoying freshly squeezed fruit juices, exotic island cocktails and our famous Chocolate Martinis.

    The Chef Born in Toulouse , in the south of France , our Executive Chef, Patrick Marty, was trained in classical French cuisine. This was followed by years of experience in numerous international hotels and restaurants all over the world, including The Intercontinental Quito, Seoul Plaza Hotel, and Hotel Meridien Al Khobar, together with a number of 5-star hotels in Indonesia . He has also achieved several awards, including the ‘Tenedor de Oro’ with the Quito International Team and a Brass Medal in the ‘Culinary Competition Bandung 2000’ with the Aston Atrium Hotel Team. Patrick specialists in country cuisine from the southwest of France blended with a light Mediterranean influence to suit Bali ’s tropical climate. The unique concept of Ma Joly provides him with the scope to create some elaborate dishes; showcasing his artistic flair with skilful presentations, an abundance of natural color and luscious vegetable sauces.
